Mexican Casserole

Sorry, John! I just had to post this one... LOL!!!

1 pound ground beef or pork

1 can corn; drained

1 cup mild chunky salsa

1/4 cup black olives

3 1/4 cups COOKED egg noodles (not 3 1/4 cups of dry noodles)

1 can kidney beans; drained and rinsed

1/4 cup taco sauce

1 package taco seasoning (see NOTE:)

1/2 cup tomato sauce

2 cups shredded cheddar or Mexican Cheese

NOTE: We no longer buy packages of taco seasoning. We make our own out of garlic, cumin, etc. If you want that recipe instead of purchasing the ready-made, please let me know. It is far better than any pre-made that we have ever had!

Preheat oven to 325 degrees.

Cook the meat until evenly browned; drain. Stir in the seasoning and tomato sauce.

In a 9" x 13" baking dish, combine the meat, corn, salsa, olives, noodles, kidney beans and taco sauce. Garnish the top with the cheese.

Bake for 30 minutes before serving.

Makes 4 servings.
