Our daughter, Leighlyn, LOVES chili rellenos! Problem is that I am not much of an authentic Mexican cook. Tacos, enchiladas and chili is about as authentic as I get. Here's a great recipe that is easy and the results are DELICIOUS!
Chili Relleno Puff
2-- 7 ounce cans whole green chilies
8 ounces shredded Monterey Jack Cheese
8 ounces shredded Cheddar Cheese
6 eggs
1 tablespoon flour
1 small can of evaporated milk
1 teaspoon baking powder
1/2 teaspoon garlic salt
Preheat oven to 350 degrees. Grease a square baking pan.
1. Beat eggs, milk, flour, baking powder and garlic salt.
2. Pour less than 1/4 of this into the baking pan.
3. Layer the chilis into this batter in pan.
4. Cover this with 1/2 of the cheeses
5. Pour the rest of the batter onto the chilis.
6. Top with the remainder of cheese.
Bake at 350 degrees for 30 minutes.
Serves 4.
