Best EVER Apple Pie

This is by far, the absolute greatest apple pie we have ever eaten! I think that you might find it to be your greatest ever also. Give it a try! My mom makes the greatest and flakiest pie crust! Here is her recipe:

Pie Crust

2 cups flour (This is enough only for the bottom and sides of a 9" pie plate.)
1/4 tsp. salt
2/3 cup butter, chilled and diced
1/4 cup ICE water

In a large bowl, combine the flour and salt. Cut in the butter until mixture resembles coarse crumbs. Stir in 1 tablespoon of the ice water at a time until the mixture forms a ball.

Roll dough out on a floured surface to fit a 9" pie plate.

Press the dough evenly into the bottom and sides of the pie plate. Now your crust is ready for your filling. Do NOT bake until the fruit has been placed into the pie crust.

Apple Pie Mixture

6 large apples (use 2 or 3 different kinds of apples. That is what makes this so good!)
1/2 cup granulated (white) sugar
1/2 cup firmly packed brown sugar
2 teaspoons flour
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon allspice
2 tablespoons butter or margarine, cut into bits
1 tablespoon grated lemon peel (optional)

1. Peel, core and thinly slice apples. Put into a bowl.

2. In a different bowl, combine sugars, flour and spices. Sprinkle 1/3rd of this mixture into the raw pie crust.

3. Toss apples with 1/2 of the remaining sugar mixture.

4. Mound apple mixture into crust.

5. Sprinkle this with the remaining sugar mixture and dot with butter bits.

A frozen pie crust can be used but using the homemade crust is better.

6. Cut 4 or 5 slits through the upper crust (made from another batch of the same pie crust recipe.)

7. Bake for 50-60 minutes in a preheated 350 degree oven or until crust is golden and apples are tender.

Let cool on a rack before slicing.
