Crockpot Ham and scalloped potatoes!!!

Few of us complain today of just having too much time in a 24-hour period. For the majority of us who feel that there just is NOT enough time to get everything done, it really helps to be able to throw a few things together of a morning and then toss them into a crockpot all day while we are busying ourselves with other details. Or, maybe you just want to be able to cook something on high that doesn't take several hours to cook. Either way, this recipe can be successful in both instances.

Regular recipe Double recipe

5 medium potatoes, peeled and sliced or 10 medium potaotes

2 cups chopped ham or 4 cups of chopped ham

4 tablespoons butter or margarine or 8 tablespoons butter or margarine

3 tablespoons flour or 6 tablespoons flour

2-4 tablespoons of dried chopped onion (OPTIONAL) or you can use however much of the fresh onion that you want to. or 4-8 tablespoons

1 teaspoon salt or 2 teaspoons salt

1/2 -1 teaspoon black pepper 1-2 teaspoons black pepper

2 cups milk 4 cups of milk

1 cup shredded cheddar cheese (You can also add extra cheese on top if you are interested.) 2 cups of shredded cheese

Place all potatoes in crockpot. Add the ham. Stir both of them together.

In a medium saucepot, melt the butter. Over medium heat, stir in flour, salt, onions (if using) and pepper. Stir as it thickens. When fairly thickened, add the 1 cup of cheese. Continue to thicken for just a few more minites.

Pour this mixture over ham and potatoes. If desired, garnish additional shredded cheddar cheese over everything.

Cover and cook on LOW for 8-10 hours or on HIGH for 3-4 servings.

Now in our case, we have two growing girls so this recipe would probably not be enough so I double it. The crockpot that I use for this recipe is one of the large ones. Even with the doubled recipe, there is still about 4 or 5 inches worth of empty space at the top of the crockpot.
