Eggs on the Go

School day mornings are a hassle (or should I say, a hustle) around here.  After the girls have dressed, brushed hair and teeth, put on socks and shoes, etc, there is usually not much time for anything else before they run to meet the bus.  However, I just discovered an easy way to cook breakfast for them.

Take a washable coffee cup that will not melt in the microwave.  Spray the inside and bottom with PAM.

Crack open two eggs and put them into the cup.  Add just a bit of milk.  Stir for just a few seconds.

Now place them in the microwave and set them to cook for one minute. 

When the timer rings, pull the cup out.  Stir the eggs and then add shredded cheese, if desired. 

The eggs will be just like scrambled eggs.  The girls loved them and were able to get them all eaten before the bus arrived.

Of course, this is not just for students.  Its great for anyone needing a quick nutritious breafast.  Your kitchen mess is very minimal too.
