New Blau Tradition for Christmas

We've all heard the Christmas story that mentioned eating plum pudding. I'd never thought too much about it until this morning when Abigayle mentioned that she would like to eat some. It sounded like a good idea to me so I found this recipe. We'll be baking some for Christmas Eve at our house. Maybe you would like to try some too?

Plum Pudding

12 fresh or canned plums: drained, pitted and halved

1 cup white sugar

1/2 cup water

2 tablespoons tapioca

1/2 teaspoon ground cinnamon

Topping

2 1/4 cups Bisquick or Jiffy All-Purpose Baking Mix

3 tablespoons white sugar

2/3 cup milk

3 tablespoons melted margarine

Preheat oven to 350 degrees.

Place the plums, 1 cup of sugar, water, tapioca and cinnamon in a 2-quart baking dish. Stir well. Bake for 25 minutes in a regular oven or 15 minutes if you are going to use your microwave for this. Remove from heat.

In a medium bowl, stir the rest of the ingredients together. This will become a dough for shortbread. Spoon this dough over the top of the pudding mixture. Bake at 450 degrees for 10 minutes or until golden brown.

Allow to cool slightly before serving. Some people serve this pudding with vanilla ice cream or whipped cream. It is totally your choice.
