Onion Casserole Recipe

I don't think that I have even heard of an onion casserole until yesterday when we enjoyed it tremendously at our Thanksgiving Dinner. You just have to try this! Maybe your family would enjoy it for Christmas?

Onion Casserole
Originally from Taste of Home--a 1997 issue

6 medium yellow onions
1/4 cup butter or margarine
1/2 cup beef broth
1/2 cup whipping cream
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 c. shredded Swiss cheese
1/2 c. grated parmeson cheese

Slice onions into 1/2 inch rings, saute in butter until tender. Place in a greased 8 inch square baking dish. In a bowl, combine broth, cream, flour, salt and pepper. Stir until smooth; pour over onions. Sprinkle with cheeses.

Bake, uncovered, at 350 degrees for 25-30 minutes or until golden brown and bubbly. Yield: 8 servings.
