1 green bell pepper; cut into long thin strips
1/2 onion cut into 1/4" pieces
1 12 ounce can of SPAM Luncheon Meat; cut into long, thin strips
3/4 cup salsa of your choice
8 8" flour tortillas; warmed
2 cups shredded lettuce
1/2 cup (or more) shredded hot pepper Monterey Jack OR Cheddar Cheese
1/2 cup nonfat plain yogurt (Optional)
Extra salsa and cheese, if desired
Spray large non-stick skillet with PAM. Heat skillet over medium-high heat. Saute green pepper slices with chopped onion for 2 minutes. Add SPAM. Saute for another 2 minutes. Stir in salsa and heat thoroughly.
Spoon about 1/2 cup SPAM mixture into tortilla. Top with the other ingredients, extra salsa and cheese.
