Crockpot BBQ Meatballs

This is a great recipe for holiday parties or anytime of the year.  Each recipe makes either 12-15 main dish servings or 20-25 appetizer servings.

Meatballs:

3 pounds ground beef or pork or turkey

1  5 ounce can evaporated milk

1 cup uncooked regular or instant oatmeal

1 cup cracker crumbs

2 whipped up eggs

1/2 cup freshly chopped onions or 2 tablespoons dried onion flakes

1/2 teaspoon garlic powder

2 teaspoons salt

1/2 teaspoon black pepper

2 teaspoons chili powder


BBQ Sauce Ingredients

2 cups ketchup

1 cup firmly packed brown sugar

1 1/2 teaspoons liquid smoke (optional)

1/2 teaspoon garlic powder

1/4 cup freshly chopped onions or  1 tablespoon dried chopped onions

1.  Combine all of the meatball ingredients in a large bowl.  Shape into walnut-sized balls.  Put these on a sheet of waxed paper.  Freeze until hard.  When completely frozen, put them in a plastic freezer bag and leave in freezer until ready to use.

2.  When you are ready to cook these, place all of them into your crockpot.  Cover.  Cook on HIGH while you are putting the sauce ingredients together in a small mixing bowl.

3.  Pour all sauce over the meatballs.  Stir gently.

4.  Cover.  Cook on HIGH for 1 hour.  Stir.  Continue to cook on LOW for 6 to 9 hours.

If you prefer not to use the BBQ sauce, substitute a large can of undiluted cream of mushroom soup or a jar of spaghetti sauce.
