Pecan Pie Bars

This recipe makes 2 dozen bars.

3 eggs

2 1/4 cups firmly packed brown sugar

2 cups self-rising flour (See NOTE)

2 cups chopped pecans

1 1/2 teaspoons vanilla extract

NOTE: If you don't have self-rising flour, try this instead. Mix 2 cups all purpose flour with 3 teaspoons of baking powder and 1 teaspoon of salt.

In a medium mixing bowl, beat eggs. Add brown sugar. Beat well. Stir in the flour until everything is smooth. Stir in the pecans and vanilla. The dough will be stiff.

Spread batter into a greased 9" x 13" baking dish. Bake at 300 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean.

Cool before cutting.
