Blau Stew

Want something easy for dinner tonight? Try this recipe that we make often. As a matter-of-fact, it is what we will be eating tonight!!! We cook it in a crockpot but it can be cooked on top of the stove also.

1 pound chopped pork tenderloin (or stew meat, your choice)

8 potatoes; peeled and chopped into bite-size pieces

1 to 2 pounds of frozen mixed vegetables

1 to 2 regular sized cans of cream of mushroom soup (undiluted)

2 envelopes of dried onion soup mix (undiluted)

1/2 soup can of hot water

In the bottom of your pot, mix up all of the meat, potatoes and mixed vegetables. Set aside.

In a medium bowl place your mushroom soup. (We use two cans because we like this dish saucier.) Gently stir in the onion soup mix until they are well-mixed. Slowly stir in the hot water until no lumps remain and you are left with a smooth, rich sauce.

Pour the sauce over the meat-potato-vegetable mixture. There is NO need to add any extra water to this. We prefer our stew saucy not brothy. I suppose if you like the broth, you can add more water or beef broth. As always, it is your choice.

Cook on LOW for 6-8 hours or on HIGH for 4 hours.

We serve this dish with homemade dinner rolls, salad and a dessert.
