Gingerbread Loaf

I will be splitting this recipe up a bit. The first recipe makes enough for 1 1/2 pounds or 16 slices. The second recipe will make a 2 pound loaf and will make 22 slices. This is delicious and can be eaten year-round!

2/3 cup milk (baby bottle temperature) 3/4 cup

1 egg (slightly beaten) 2 eggs

1/4 cup mild or regular molasses 1/3 cup

3 tablespoons margarine OR butter 1/4 cup

3 cups all purpose or bread flour 4 cups

1 tablespoon brown sugar 4 teaspoons

3/4 teaspoon salt 1 teaspoon

3/4 teaspoon ground cinnamon 1 teaspoon

3/4 teaspoon ground ginger 1 teaspoon

1 teaspoon yeast 1 1/2 teaspoons


For our bread machine, we are supposed to layer the ingredients like this:

In the bottom, put the milk--egg(s)--molasses--chopped up margarine or butter--flour--brown sugar--salt--cinnamon--ginger--yeast.

You can either choose to just let the machine make the dough and then bake it in your oven or allow the machine to mix, knead and bake the dough. Cool it a bit before slicing. Bag up any unused bread.
