Au Gratin Potatoes

2 1/2 pounds potatoes (reds are the sweetest for this)

2 tablespoons butter or margarine

1/2 cup chopped onion

4 teaspoons garlic powder

2 tablespoons flour

1/2 teaspoon black pepper

1 1/2 cup milk

1 cup shredded cheese

Preheat oven to 375 degrees. Grease a large baking dish.

Peel and slice the potatoes fairly thinly. Place in a saucepan and boil for 2 minutes. Drain immediately. Make a row of the potato slices on the bottom of the baking dish. Sprinkle with some salt and pepper. Continue to make more rows until all of the potatoes are in the baking dish. Sprinkle salt and butter on each row before you begin laying the next row.

In a small saucepan, melt your butter or margarine over medium low heat. Add the chopped onion and saute until tender. Add the garlic, flour and pepper; stirring until smooth. Slowly add the milk until thickened. Stir in the cheese. Continue to stir until the cheese is completely melted and the mixture is smooth. Pour this sauce over the tops of the potatoes. If you want to, sprinkle some more shredded cheese over the potatoes. Cover the pan and cook at 375 degrees for 40-50 minutes.
