Porcupine Balls

I cooked these and the Au Gratin Potatoes for lunch today. They were DELICIOUS! We are going to eat the leftovers for dinner tonight!

Meatball Ingredients:

2 1/2 to 3 pounds of ground beef or ground pork

1 cup UNcooked Minute Rice

1/2 to 3/4 cup water

1 medium onion; chopped

1 1/2 teaspoon salt

1 1/2 teaspoon black pepper

2-4 teaspoons garlic powder

Sauce Ingredients

16 ounces ketchup OR tomato sauce

1/2 to 3/4 cup brown sugar

1 1/2 teaspoons Liquid Smoke OR Worcester Sauce (OPTIONAL)

Preheat oven to 375 degrees. Grease 9" x 13" with PAM, etc.

Stir all of the meatball ingredients in a large bowl. In my case, I prefer to use my hands to mix everything together. That way, I feel like everything is better combined.

Divide the meat into approximately 24 balls. Place each ball into the baking pan. Stir all of the sauce ingredients together. Pour the sauce over all of the meatballs.

Cover the pan with an oven-safe lid or aluminum foil. Bake at 375 degrees for 1 hour.

You can choose to cook these in the crockpot also. Just mix your meatball ingredients together. Place the meat mixture into your crockpot. Pour the sauce over the meat. Cook on LOW for approximately 6-8 hours.
