"Cat Head Biscuits"

Once these biscuits are fully-baked, they should be the size of a cat's head.

2 cups flour
1/4 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
5 tablespoons lard or shortening
about 1 cup buttermilk or sweet milk, your choice

Sift the dry ingredients together. Cut in the lard or shortening. Add enough milk to make a soft dough. Pinch off about a lemon-sized ball of dough for each biscuit. Pat out with your hands.

Bake in preheated 450 degree oven for 12-15 minutes or until the biscuit tops are golden brown. Remove the biscuits from the oven and rub butter on the top of each hot biscuit to coat.
