Beef Veggie Borscht (CROCKPOT)

This main dish will usually serve 8 people.

1 pound beef roast; cooked and chopped into bite-size pieces

half a head of cabage; sliced thinly

3 medium potatoes; chopped into small pieces

4 sliced carrots

1 large onion; chopped into small pieces

1 cup canned or fresh tomatoes; diced

1 cup whole kernel corn

1 cup green beans

2 cups beef broth

2 cups tomato juice or tomato sauce

1/4 teaspoon garlic powder

1/4 teaspoon dill seed

2 teaspoons salt

1/2 teaspoon black pepper

water

1 cup diced red beets (optional)

sour cream

Put all ingredients EXCEPT water, beets and sour cream, into your crockpot. Add just enough water to the 3/4 level of the crockpot. When the Borscht is 30 minutes away from being fully cooked, add the beets, if desired.

As soon as you dip the food into your soup bowl, top it off with sour cream, if desired.

Cook on LOW for 8-10 hours.
