Buffalo or Beef Burgers

What American food could be any more American that buffalo? But buffalo is not generally as easy to find as beef is. This recipe is great for either ground buffalo or ground beef.

This recipe makes 6 burgers which will feed 4-6 people. Serve them on hamburger buns with ketchup, mustard, pickles, onion slices, etc.

1/2 cup softened butter

1 green onion, chopped finely

2 tablespoons chopped cilantro

1 tablespoon parsley flakes

1 small red hot pepper; finely minced

2 pounds lean ground buffalo, ground beef or a mixture of the two meats

1 stick of butter cut into 6 slices


In small bowl, combine all of the softened butter, green onion, cilantro, parsley and minced hot pepper. Stir well. Set aside.

In large bowl, place all of the meat. Break it up. Using your hands, add the first mixture to this. Work the spices, etc into the meat very well. Once this has been done, make 6 equally sized balls of the meat mixture. Place each ball onto a hot skillet or grill. Flatten with a spatula until the desired depth is reached. Using a tablespoon, made a depression in each patty. Place one of the butter slices into the hole left behind. Using your fingers, gently pull the meat around the hole over the patty so that the butter slice is hidden.

Continue to cook each patty until both sides of it are well cooked. Ask your guests how rare or well-done they want their burger done.

Put on buns and serve with all of the fixings.
