Chicken Fiesta in a Crockpot

This would be a great meal for extra family and friends who will be joining you for the holidays!

2 tablespoons cooking oil

3 pounds boneless, skinless chicken breasts; cut into bite-sized pieces

1 chopped medium onion

1 chopped green pepper with the seeds removed first

3 cloves minced garlic

1 SMALL chopped jalapeno pepper (optional)

14 1/2 ounces Mexican style diced tomatoes

1/4 teaspoon cumin

1 teaspoon oregano

1. Pour the oil into a large skillet; heat. Place the pieces of raw chicken into the skillet until browned on all sides. When browned, the chicken needs to be put into your crockpot. Discard the rest of the oil.

2. Using the same skillet, saute the onion, green pepper, garlic, cumin, oregano and jalapeno, if desired. Once these are slightly cooked and softened, they are ready to join the chicken in the crockpot. Stir well.

Cover and cook on HIGH for 3-4 hours or on LOW for 7-9 hours.

Spoon the food into a warm flour or corn tortilla. Eat it just like that or roll it up like a burrito. Serve with refried beans, Spanish Rice, etc.
