Pecan Pie with NO Pecans

1 cup of COOKED pinto beans, drained (See NOTE)

1 cup brown sugar

1 cup white sugar

1 stick of butter or margarine, melted

2 eggs, beaten

1 teaspoon vanilla

Several pecan halves (optional)

1 unbaked pie shell

Note: Do not use any kind of meat to season the pinto beans. Simply cook them in water.

Preheat oven to 350 degrees.

Mash the drained beans. Set aside.

Combine sugar, butter and eggs. Beat in the beans and vanilla. Pour into an unbaked pie shell. If you want, scatter some pecan halves onto this mixture and bake for about 45 minutes.
