Watergate Fruit Salad

My mom made this delight over and over again when I was still in high school and afterwards. As I flipped through my handy, dandy recipe box, I came across it. It seems to me that I should post it here in case you may not have had it before. By the way, does anyone know why it was named "Watergate"??? I know that when Mama first discovered it, the political investigation, Watergate, was in full force. Hmmm... By the way, if you are preparing this for a large group of people, you may want to double or triple the ingredients. This salad is ALWAYS popular!!!

1 20-ounce can of crushed pineapple WITH juice (Do NOT drain)

1 small package of pistachio instant pudding

1 cup miniature marshmallows

1/2 cup chopped pecans

1 1/2 cups (12 ounces) Cool Whip

A few chopped pecans for garnish (OPTIONAL)

Mix everything EXCEPT the Cool Whip in a medium to large mixing bowl with a spoon, not an electric mixer. Once you have thoroughly done this, stir in the Cool Whip. Mix well.

Pour into your serving bowl. Smooth the top with your spoon. Garnish the top with a few chopped pecans.

I recommend that you chill this in your refrigerator for an hour or so so that the flavors can all mingle with one another.
