Peanut Clusters

It is that time of the year again when everyone expects to find some homemade candy. Unfortunately, most of us don't seem to have much time to spend on their preparation though. Here is a simple recipe that most of us can fit into our busy schedules!

For this recipe, you will need a double boiler. Many of us who do not center our lives around cooking don't always have these pans. If you are one of those such people, do this instead. Use a large saucepan that a smaller saucepan will fit into easily.

Fill the large saucepan up halfway with hot water. Heat to boiling.

Place the smaller saucepan into the larger one.

You're ready to go!!!

1 pound white chocolate (Most grocers carry this.)

12 ounces of chocolate chips (usually semi-sweet)

1 pound salted peanuts

Melt the white chocolate in the top pan. Add the chocolate chips. Mix well until all are melted. Stir in the peanuts.

Use a tablespoon to scoop out each cluster. Place on waxed paper covered cookie sheets. Cool. Serve immediately or place in airtight containers or ziplock bags.

I told you that this was going to be simple, didn't I???
