Swedish Pork Sausage Potato Cakes

Potato cakes are not just for breakfast. Give them to your family and guests ANYTIME! They'll enjoy them!

1/4 pound (4 ounces) pork sausage (Uncooked)

1 1/2 cup cooked mashed potatoes

1 egg (beaten)

1 pinch of salt


Crumble and brown the sausage in a small to medium skillet. Drain and SAVE the drippings.

Place the browned sausage, potatoes, eggs and about a tablespoon of drippings in a large bowl. Mix well.

Form this mixture into 4 patties. Fry them in the rest of the saved drippings (add vegetable or canola oil, if necessary).

Serve hot.
