Porcupine Meat Balls

This is one of those recipes that we used to hear about a lot. Now, they are not cooked as much. I think that it is high time that we bring them back!!! LOL!!!

These are easy to make. Use a greased 2-quart baking dish or a 9" x 13" pan. Each recipe makes enough for 4-6 servings.


1 1/2 pounds ground beef or ground pork

a little salt and pepper

2 eggs, slightly beaten

1/2 cup cracker or bread crumbs

1 small onion, chopped

1/2 cup UNCOOKED rice

1 LARGE can tomato soup

1/2 of the soup can water


Preheat oven to 350 degrees.

In a large mixing bowl, combine the top 6 ingredients (those above the black line.) Stir well. Form them into little meatballs about the size of walnuts. Place them into the greased casserole dish. Set aside.

In a medium sized bowl, pour the soup. Add the water a little at a time while you are stirring constantly. Pour this over the meatballs.

Bake for 1 1/2 hours.
