Fried Corn OR Fried Mixed Vegetables

This recipe serves 4-6 people.

4 tablespoons butter

16 ounces (1 pound)of either frozen corn or mixed vegetables, thawed out.

3 tablespoons sugar or honey

1/3 cup heavy whipping cream (in the dairy department)

salt

1/2 teaspoon black pepper

The cream in this recipe is not whipped cream such as Cool Whip, etc. It is just cream that you can either add sugar and vanilla to convert into whipped cream or pour over cereal, etc.

In a large skillet over MEDIUM heat, melt the butter. When the butter is foamy, add the corn or mixed vegetables. Cook, stirring to coat all of the vegetables with the butter. Continue cooking, stirring frequently, for 1 more minute. Stir in the sugar or honey. Increase the heat to HIGH. Add cream. Continue to stir so that the vegetables do not stick to the skillet. Add the salt and pepper. Continue cooking until most of the cream has been absorbed--about 5 more minutes. Serve hot!
