Paula Deen's Corn Fritters

The Food Network's Paula Deen is an AMAZING cook that so many of us turn to when we are in need of new recipes or better methods for putting together old favorites. This is one of her recipies!

1 1/4 cup self-rising cornmeal mix
1 1/4 cup all purpose flour
1/4 cup sugar
1 teaspoon salt

1 cup milk
2 eggs, slightly beaten
1/4 cup (1/2 stick) butter, melted

1 15 1/4 ounce can of corn; drained

Vegtable or canola oil for frying.

powdered sugar (optional)

Pour oil to a depth of 2 inches in a Dutch oven or use a deep fat fryer.
Heat oil to 325 degrees.

In medium bowl, combine all dry ingredients. Mix well.

In a small bowl, stir milk and eggs together. Add melted butter.

Add the milk mixture to the dry ingredients. Stir well.

Stir in the drained corn.

Drop batter by tablespoonfuls into hot oil. Cook for 2-4 minutes or until golden. (Yu must turn the fritter over after the first 2 minutes.)

Drain on paper towels. Sprinkle with powdered sugar if desired.

Serve hot.
