Scalloped Ham and Potatoes With Corn (Crockpot)

This is a great every-day recipe but would also be great for Thanksgiving and Christmas. If you're like us, your oven is always full on those mornings with food. Doesn't it just make sense to cook as much food as possible in crockpots? We think so!


5 potatoes, peeled and cubed
1 1/2 C. cubed cooked ham
1 15 oz. can whole kernel corn, drained
1/4 C. chopped green bell pepper
2 tsp. instant minced onion
1 11 oz. can condensed cheddar cheese soup, (undiluted)
1/2 C. milk
3 Tbs. all-purpose flour


In a 3 1/2-4 quart slow cooker, combine potatoes, ham, corn, green pepper and onion; mix well. In a small bowl, combine soup, milk and flour; beat with wire whisk until smooth. Pour soup mixture over potato mixture and stir gently to mix. Cover and cook on LOW setting for about 8 hours OR 4 hours on HIGH until potatoes are tender.

Makes 6 servings
