South--of--the--Border Pinto Beans (Crockpot)

1 pound dry pinto beans; sorted and rinsed

1 large chopped onion

2 cloves of minced fresh garlic OR 3-4 teaspoons of ground garlic

6 1/2 cups HOT water

1 tablespoon chili powder

1 1/2 teaspoons salt

1/2 teaspoon pepper

Combine all of these ingredients in a greased crockpot. Stir well. Set the crockpot to the LOW setting. Cook for 7-9 hours. Serve with cornbread.

  1. I'll have to try this. I'm looking for more crockpot recipes. I presume that you mean dry, soaked beans?

  2. I'll get some more on here for you!

    There is no real need in soaking the beans as people do when they will be cooking them on stovetops. Just sort through them to look for any pieces, etc. Rinse them off, put them in the crockpot with the other goodies and press LOW. Walla! Your beans will take care of themselves from this point on. VLE-B
