Cheeseball in the shape of a pumpkin

Lori also sent this recipe to me!

1 large package of cream cheese (softened)
2 cups shredded cheese
2 tablespoons finely chopped onion
2 tablespoons finely chopped carrots
2 tablespoons finely chopped celery
1 tablespoon horseradish
1 stem of broccoli (approximately 3" long) peeled

In large bowl, beat cream cheese until smooth. Add cheddar cheese, onions, carrot, celery, parsley and horseradish. Form into a ball. Wrap it in plastic wrap. Refrigerate until firm, about one hour. You can actually make this a week ahead of when you will be eating it.

Unwrap the ball and insert the stem of broccoli into the center at the top of the cheeseball to resemble a pumpkin stem. Draw verticle ridges down the sides of the cheese ball to look like a pumpkin.

Serve with all kinds of crackers and/or fresh vegetables.
