Homemade Pork Sausage

Approximately 4 or 5 times a year, we purchase large quantities of pork from Seaboard. This is one of the recipes that we use with that meat. Give it a try sometime! Whatever you don't need right now, can be placed into individual meal quart or gallon freezer bags and frozen until later!

5 pounds ground pork

1 tablespoon PLUS 2 teaspoons ground sage

1 tablespoon PLUS 3/4 teaspoon salt

1 tablespoon PLUS 3/4 teaspoon black pepper

1 1/4 teaspoon ground cayenne pepper

1 1/4 teaspoon brown sugar.

In a large bowl, combine all of the above ingredients. You can use a wooden spoon to mix this but we find that using your hands is the best method.

Place individual amounts of this sausage into quart or gallon freezer bags. Place into freezer and pull out to thaw for your next meal. This is great for all kinds of recipes requiring sausage.
