Tarragon--the Spice

I received a question on tarragon that is called for with the Holiday Potato recipe. This lady does not normally use Tarragon. I don't either. She wanted to know what spice she could use to substitute it with. Spices are extremely expensive so I see no reason to go out and buy any spice unless you know for a fact that this is something that you will want to use again. I did some research and learned that Tarragon is used in a variety of recipes for anything from cakes to potatoes to fish. I also learned that 3 good substitutes are marjoram, thyme and oregano.

I hope that this helps others out there who don't normally use tarragon.
