Whipped Sweet Potato Bake

This is a REALLY easy recipe that includes the spice, ginger. I never heard of that in a sweet potato recipe before!

3 15-ounce cans of sweet potatoes, drained

1/4 cup butter or margarine, melted

1 teaspoon cinnamon

1 teaspoon ginger

1/4 teaspoon nutmeg

3 cups miniature marshmallows

Preheat oven to 350 degrees. Spray 1 1/2 quart casserole dish with PAM.

In a medium mixing bowl, beat the sweet potatoes, butter and all spices until smooth. Gently spoon this mixture into your casserole dish. Top with the marshmallows.

Place in oven for 15-20 minutes until thoroughly heated and marshmallows are a light brown.
